Aljomar 100% Iberico acorn-fed ham has been awarded best Iberico ham in Spain, 2022 in this year’s Alimentos de España (Foods of Spain) awards, convened by the Ministry of Agriculture, Fisheries and Food. The results were announced this week.
The Aljomar ‘black label’ received the maximum score in a rigorous blind taste test developed by tasters from the Research and Agri-alimentary Technology Institute (IRTA), and by industry specialists convened by the Ministry; taking into account sensory aspects as well as the form and aesthetics of the piece, including its aroma, texture and flavour.
This important award recognizes excellence in the development of a star product in Spanish gastronomy and highlights the high quality applied by the Aljomar family in the production of their product over the last 30 years, carefully controlling every detail of the production cycle: from the selection and breeding of pure breed Iberico pigs, the careful feeding in the Dehesa pastures, and to the detailed curing process in Guijelo. The entire process recognized by the Animal Welfare certification for its entire livestock.
